Ingredients:  

Main Ingredients

  • 1 lb asparagus trimmed and cut into 1-inch pieces
  • 1 cup cherry tomatoes halved
  • 1 cup vegan cheese shredded
  • 1 cup unsweetened almond milk
  • 2 tbsp nutritional yeast
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the asparagus, cherry tomatoes, and olive oil. Season with salt and pepper.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • In the same mixing bowl, whisk together the almond milk, nutritional yeast, garlic powder, and onion powder.
  • Pour the almond milk mixture over the vegetables in the baking dish.
  • Sprinkle the shredded vegan cheese on top.
  • Bake in the preheated oven for 35-40 minutes, or until the vegetables are tender and the top is golden brown.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add other vegetables like bell peppers or mushrooms.
