Ingredients:

  • 2 packs Ramen noodles discard seasoning packets
  • 1 lb Ground beef
  • 1 can Black beans drained and rinsed
  • 1 cup Corn kernels frozen or canned
  • 1 cup Salsa
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 1 packet Taco seasoning

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Cook the ramen noodles according to package instructions, but discard the seasoning packets. Drain and set aside.
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the beef and stir to combine.
  • In a large mixing bowl, combine the cooked ramen noodles, seasoned beef, black beans, corn, and salsa. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly. Top with shredded cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!
