Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Salsa
  • 1 cup Shredded Cheddar Cheese
  • 1 packet Taco Seasoning
  • 1 cup Cooked Rice

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the beef and stir well.
  • In a large mixing bowl, combine the cooked beef, black beans, corn, salsa, cooked rice, and half of the shredded cheese.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the remaining cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This Tex Mex Casserole is great for meal prep and can be stored in the fridge for up to 3 days.
