green bell pepper, chopped

shredded cheddar cheese
Instructions:
Preheat oven to 350°F (175°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
Stir in rice, diced tomatoes, tomato sauce, chicken broth, chili powder, and cumin. Bring to a boil.
Transfer mixture to a baking dish. Cover with foil and bake for 30 minutes.
Remove foil, sprinkle with cheese, and bake for an additional 15 minutes, or until cheese is melted and bubbly.
Notes:
Feel free to add some jalapeños for extra heat!
