Ingredients:  

Main Ingredients

  • 1 cup uncooked rice
  • 1 pound ground beef
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 cup chicken broth
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup shredded cheddar cheese

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
  • Stir in rice, diced tomatoes, tomato sauce, chicken broth, chili powder, and cumin. Bring to a boil.
  • Transfer mixture to a baking dish. Cover with foil and bake for 30 minutes.
  • Remove foil, sprinkle with cheese, and bake for an additional 15 minutes, or until cheese is melted and bubbly.

Notes:

Feel free to add some jalapeños for extra heat!
