shredded cheddar cheese

sour cream

crushed Ritz crackers

melted butter

Instructions:
Preheat your oven to 350°F (175°C).
In a large pot, boil the squash and onion until tender. Drain well.
In a mixing bowl, combine the squash and onion with the cheese, sour cream, salt, and pepper.
Pour the mixture into a baking dish. Top with crushed Ritz crackers and drizzle with melted butter.
Bake for 25-30 minutes, or until the top is golden brown.
Notes:
This casserole is a great way to use up extra squash from the garden.
