Ingredients:  

Main Ingredients

  • 2 cups Cooked rice
  • 1 cup Black beans drained and rinsed
  • 1 cup Corn kernels frozen or canned
  • 1 cup Salsa
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the cooked rice, black beans, corn, salsa, half of the shredded cheese, cumin, chili powder, salt, and pepper. Mix well.
  • Transfer the mixture to a greased baking dish and spread it out evenly.
  • Sprinkle the remaining shredded cheese on top.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

Feel free to add other ingredients like diced tomatoes, bell peppers, or jalapeños for extra flavor.
