Instructions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the potatoes, 1.5 cups of cheddar cheese, sour cream, cream of chicken soup, green onions, salt, and pepper. Mix well.
Transfer the mixture to a greased baking dish and spread it out evenly.
Sprinkle the remaining 0.5 cup of cheddar cheese and bacon bits on top.
Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
Let it cool for a few minutes before serving. Enjoy!

Feel free to add more cheese or bacon bits if you like it extra cheesy and savory.
