Ingredients:  

Main Ingredients

  • 1 cup Lentils rinsed and drained
  • 1 cup Rice uncooked
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 cup Shredded Cheese optional

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine lentils, rice, vegetable broth, diced tomatoes, garlic powder, onion powder, salt, and black pepper.
  • Pour the mixture into a baking dish and cover with foil.
  • Bake for 45 minutes, or until the lentils and rice are tender.
  • If using, sprinkle shredded cheese on top and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Let the casserole sit for a few minutes before serving.

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 4 days.
