Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine lentils, rice, vegetable broth, diced tomatoes, garlic powder, onion powder, salt, and black pepper.
Pour the mixture into a baking dish and cover with foil.
Bake for 45 minutes, or until the lentils and rice are tender.
If using, sprinkle shredded cheese on top and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Let the casserole sit for a few minutes before serving.
Notes:
This casserole is great for meal prep and can be stored in the fridge for up to 4 days.
