King Ranch Beef Casserole Recipe

Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 can Cream of Mushroom Soup
  • 1 can Cream of Chicken Soup
  • 1 can Diced Tomatoes with Green Chilies
  • 1 cup Chicken Broth
  • 1 cup Shredded Cheddar Cheese
  • 12 pieces Corn Tortillas
  • 1 medium Onion, chopped
  • 1 tbsp Olive Oil

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  • Add ground beef to the skillet and cook until browned. Drain excess fat.
  • Stir in cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, and chicken broth. Mix well.
  • In a baking dish, layer half of the corn tortillas, followed by half of the beef mixture, and half of the shredded cheese. Repeat layers.
  • Bake in the preheated oven for 30-40 minutes, until bubbly and cheese is melted.
  • Let cool for a few minutes before serving.

Notes:

Great served with a side salad or steamed vegetables.
