Instructions:
Preheat oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
Add ground beef to the skillet and cook until browned. Drain excess fat.
Stir in cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, and chicken broth. Mix well.
In a baking dish, layer half of the corn tortillas, followed by half of the beef mixture, and half of the shredded cheese. Repeat layers.
Bake in the preheated oven for 30-40 minutes, until bubbly and cheese is melted.
Let cool for a few minutes before serving.
Notes:
Great served with a side salad or steamed vegetables.
