Ingredients:

  • 1 lb Ground Beef lean
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Salsa low carb
  • 1 tbsp Taco Seasoning keto-friendly
  • 1 cup Sour Cream
  • 1 medium Bell Pepper diced
  • 1 medium Onion diced

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add diced bell pepper and onion to the skillet. Cook until softened.
  • Stir in taco seasoning and salsa. Simmer for a few minutes.
  • Transfer the mixture to a baking dish. Spread sour cream over the top.
  • Sprinkle shredded cheddar cheese over the sour cream layer.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add more vegetables like zucchini or spinach for extra nutrition.
