Instructions:
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion to the skillet and cook until softened.
In a large bowl, combine cooked beef, onion, sliced squash, cream of mushroom soup, salt, and pepper.
Transfer mixture to a baking dish. Top with shredded cheddar cheese and bread crumbs.
Bake in preheated oven for 45 minutes, or until bubbly and golden brown on top.
Notes:
Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
