Ingredients:  

Main Ingredients

  • 1 cup farro uncooked
  • 2 cups vegetable broth
  • 1 cup chopped tomatoes canned or fresh
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine farro and vegetable broth. Let it sit for 10 minutes.
  • In a baking dish, mix soaked farro, chopped tomatoes, shredded cheese, chopped onion, minced garlic, olive oil, salt, and black pepper.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes until the top is golden and crispy.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
