Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine farro and vegetable broth. Let it sit for 10 minutes.
In a baking dish, mix soaked farro, chopped tomatoes, shredded cheese, chopped onion, minced garlic, olive oil, salt, and black pepper.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 15 minutes until the top is golden and crispy.
Let it cool for a few minutes before serving. Enjoy!
