Ingredients:  

Main Ingredients

  • 1 large Eggplant sliced
  • 2 medium Potatoes sliced
  • 1 cup Tomato Sauce
  • 1 cup Shredded Cheese
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Slice the eggplant and potatoes.
  • In a baking dish, layer the eggplant and potatoes.
  • Pour the tomato sauce over the layers.
  • Sprinkle shredded cheese on top.
  • Drizzle olive oil, and season with salt and pepper.
  • Bake for 40 minutes or until the top is golden and bubbly.

Let it cool for a few minutes before serving.
