Instructions:
Preheat your oven to 375°F (190°C).
Slice the eggplant and potatoes.
In a baking dish, layer the eggplant and potatoes.
Pour the tomato sauce over the layers.
Sprinkle shredded cheese on top.
Drizzle olive oil, and season with salt and pepper.
Bake for 40 minutes or until the top is golden and bubbly.
