Ingredients:  

Main Ingredients

  • 10 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can diced green chilies 4 oz
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup melted butter

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large bowl, beat the eggs until smooth.
  • Add cottage cheese, Monterey Jack cheese, and green chilies. Mix well.
  • Stir in flour, baking powder, and salt.
  • Add melted butter and mix until combined.
  • Pour the mixture into a greased 9x13-inch baking dish.
  • Bake for 45 minutes or until the top is golden and the center is set.
  • Let it cool for a few minutes before serving.

Notes:

Great for breakfast or brunch. Can be made ahead and reheated.
