Instructions:
Preheat oven to 350°F (175°C).
In a large bowl, beat the eggs until smooth.
Add cottage cheese, Monterey Jack cheese, and green chilies. Mix well.
Stir in flour, baking powder, and salt.
Add melted butter and mix until combined.
Pour the mixture into a greased 9x13-inch baking dish.
Bake for 45 minutes or until the top is golden and the center is set.
Let it cool for a few minutes before serving.
Notes:
Great for breakfast or brunch. Can be made ahead and reheated.
