Ingredients:

  • 2 cups cherry tomatoes, halved
  • 2 cups mozzarella cheese, shredded
  • 1 cup fresh basil leaves, chopped
  • 1 cup balsamic vinegar
  • 2 tbsp olive oil
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine cherry tomatoes, mozzarella cheese, and fresh basil leaves.
  • Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste. Mix well.
  • Transfer the mixture to a baking dish.
  • Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  • Remove from oven and let it cool for a few minutes before serving.

Notes:

Feel free to add some cooked chicken or pasta to make it a more hearty meal.
