Ingredients:

  • 2 medium zucchini sliced
  • 2 cups cherry tomatoes halved
  • 1 cup mozzarella cheese shredded
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchini and halve the cherry tomatoes.
  • In a baking dish, layer the zucchini slices and cherry tomatoes.
  • Drizzle olive oil over the vegetables and sprinkle with Italian seasoning, salt, and pepper.
  • Top with shredded mozzarella cheese.
  • Bake for 30 minutes or until the cheese is bubbly and golden brown.
  • Let it cool for a few minutes before serving. Enjoy!
