Ingredients:  

Main Ingredients

  • 1 lb Ground turkey
  • 1 cup Chopped onion
  • 1 cup Chopped bell pepper
  • 1 can Black beans, drained and rinsed
  • 1 can Corn, drained
  • 1 can Diced tomatoes
  • 1 cup Shredded reduced-fat cheddar cheese
  • 1 packet Taco seasoning

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground turkey over medium heat until browned.
  • Add chopped onion and bell pepper to the skillet, cook until softened.
  • Stir in black beans, corn, diced tomatoes, and taco seasoning. Simmer for 5 minutes.
  • Transfer mixture to a baking dish. Top with shredded cheese.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add your favorite toppings like sour cream, avocado, or cilantro.
