Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Salsa
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 1 package Cornbread mix prepared according to package instructions

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • In a large mixing bowl, combine the cooked beef, black beans, corn, and salsa. Mix well.
  • Pour the mixture into a greased baking dish. Spread evenly.
  • Sprinkle the shredded cheese over the top of the mixture.
  • Prepare the cornbread mix according to the package instructions. Spread the cornbread batter evenly over the top of the cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
  • Let cool for a few minutes before serving. Enjoy!

Notes:

This casserole is perfect for a family dinner or potluck. Feel free to add more veggies or spices to suit your taste.
