Ingredients:  

Main Ingredients

  • 1 kg Pork Belly cut into chunks
  • 2 cups Chicken Broth
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Thyme dried
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 2 tbsp Tomato Paste

Instructions: 

  • Preheat your oven to 160°C (320°F).
  • Heat olive oil in a large pan over medium heat. Add pork belly chunks and brown on all sides.
  • Remove pork from the pan and set aside. In the same pan, add diced onion and minced garlic. Cook until softened.
  • Add tomato paste, thyme, salt, and pepper to the pan. Stir well.
  • Return the pork to the pan. Add chicken broth, carrots, and celery. Bring to a simmer.
  • Transfer everything to a casserole dish. Cover with a lid or foil and bake in the preheated oven for 90 minutes.
  • Remove from oven and let it rest for a few minutes before serving.

Notes:

Serve with mashed potatoes or crusty bread.
