Instructions:
Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together the eggs, milk, maple syrup, and vanilla extract.
Add the rolled oats, cinnamon, and salt to the bowl and mix well.
Fold in the chopped nuts and dried fruit if using.
Pour the mixture into a greased baking dish.
Bake for 30 minutes or until the top is golden and the center is set.
Let it cool for a few minutes before serving.
Notes:
This oatmeal casserole can be stored in the fridge for up to 5 days. Reheat in the microwave or oven before serving.
