Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 bag tortilla chips, crushed

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef and onion over medium heat until beef is browned and onion is tender. Drain excess fat.
  • Add black beans, corn, diced tomatoes with green chilies, and taco seasoning to the skillet. Stir to combine and cook for 5 minutes.
  • In a baking dish, layer half of the crushed tortilla chips, then half of the beef mixture, and half of the shredded cheese. Repeat layers.
  • Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add jalapeños for extra spice!
