Ingredients:  

Main Ingredients

  • 2 cups macaroni
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 can corn drained
  • 1 can black beans drained and rinsed

Instructions: 

  • Preheat oven to 350°F (175°C).
  • Cook macaroni according to package instructions. Drain and set aside.
  • In a large saucepan, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and salsa to the beef. Stir to combine.
  • In a large mixing bowl, combine cooked macaroni, beef mixture, corn, black beans, and 1 cup of shredded cheese.
  • Transfer the mixture to a baking dish. Top with remaining cheese.
  • Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
