Ingredients:

  • 1 lb Ground Beef
  • 1 cup Salsa
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Sour Cream
  • 1 tbsp Taco Seasoning
  • 1 cup Chopped Bell Peppers
  • 1 cup Chopped Onions

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning, salsa, bell peppers, and onions to the skillet. Cook for 5 minutes.
  • Transfer the mixture to a baking dish. Spread sour cream on top, then sprinkle with shredded cheese.
  • Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
