Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 can Enchilada sauce 15 oz
  • 1 can Black beans 15 oz, drained and rinsed
  • 1 cup Corn kernels fresh or frozen
  • 8 pieces Corn tortillas
  • 2 cups Shredded cheese cheddar or Mexican blend
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the chopped onion and minced garlic to the beef. Cook until the onion is translucent.
  • Stir in the cumin, chili powder, salt, and pepper. Mix well.
  • In a baking dish, spread a thin layer of enchilada sauce.
  • Place a layer of corn tortillas on top of the sauce.
  • Spread a layer of the beef mixture over the tortillas, followed by black beans, corn, and cheese.
  • Repeat the layers, ending with a layer of cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

You can customize this recipe by adding your favorite toppings like sour cream, avocado, or cilantro.
