Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine Greek yogurt, minced garlic, olive oil, oregano, salt, and black pepper.
Layer half of the sliced potatoes in a baking dish.
Spread half of the yogurt mixture over the potatoes and sprinkle with half of the crumbled feta cheese.
Repeat the layers with the remaining potatoes, yogurt mixture, and feta cheese.
Cover the baking dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
Let it cool for a few minutes before serving.
Notes:
For a richer flavor, you can add a layer of sautéed onions and bell peppers.
