frozen or canned

shredded cheese
cheddar or Mexican blend

packet
taco seasoning

Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the taco seasoning to the beef and stir well.
In a large bowl, combine the cooked beef, uncooked rice, diced tomatoes, black beans, corn, and water. Mix well.
Transfer the mixture to a baking dish and cover with foil.
Bake in the preheated oven for 45 minutes, or until the rice is tender.
Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving. Enjoy!
Notes:
This casserole can be made ahead and refrigerated. Just add an extra 10 minutes to the baking time if baking from cold.
