Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 packet taco seasoning
  • 1 cup water

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the beef and stir well.
  • In a large bowl, combine the cooked beef, uncooked rice, diced tomatoes, black beans, corn, and water. Mix well.
  • Transfer the mixture to a baking dish and cover with foil.
  • Bake in the preheated oven for 45 minutes, or until the rice is tender.
  • Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be made ahead and refrigerated. Just add an extra 10 minutes to the baking time if baking from cold.
