Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag tortilla chips, crushed

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the beef and stir to combine.
  • In a large mixing bowl, combine the cooked beef, black beans, corn, sour cream, and 1 cup of shredded cheddar cheese.
  • Spread the mixture into a baking dish. Top with the crushed tortilla chips and the remaining 1 cup of shredded cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is great for leftovers and can be stored in the fridge for up to 3 days.
