Ingredients:  

Main Ingredients

  • 2 cups Carolina Gold rice
  • 1 lb chicken breast, diced
  • 1 cup cheddar cheese, shredded
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 1 tbsp olive oil

Instructions: 

  • Preheat oven to 350°F (175°C).
  • Cook rice according to package instructions.
  • In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  • Add diced chicken to the skillet and cook until no longer pink.
  • In a large bowl, combine cooked rice, chicken mixture, cream of mushroom soup, chicken broth, milk, and half of the shredded cheese. Mix well.
  • Pour mixture into a greased casserole dish. Top with remaining cheese.
  • Bake for 30-35 minutes, or until bubbly and golden on top.

Notes:

Great for family dinners and potlucks.
