Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef and onion over medium heat until beef is browned.
Drain excess fat and transfer to a mixing bowl.
Stir in cream of mushroom soup, frozen peas, and 1 cup of shredded cheddar cheese.
Transfer mixture to a baking dish and spread mashed potatoes on top.
Sprinkle remaining cheddar cheese over the mashed potatoes.
Bake in preheated oven for 30-40 minutes, until cheese is melted and bubbly.
Notes:
Feel free to add more vegetables or substitute the ground beef with ground turkey for a lighter version.
