Ingredients:  

Main Ingredients

  • 2 medium zucchini sliced
  • 1 large onion sliced
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine sliced zucchini, sliced onion, olive oil, salt, and pepper. Toss to coat evenly.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle shredded cheese over the top, followed by breadcrumbs.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the zucchini is tender.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

Feel free to add other vegetables like bell peppers or mushrooms for variety.
