Instructions:
Preheat your oven to 375°F (190°C).
In a large bowl, combine sliced zucchini, sliced onion, olive oil, salt, and pepper. Toss to coat evenly.
Transfer the mixture to a baking dish and spread it out evenly.
Sprinkle shredded cheese over the top, followed by breadcrumbs.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the zucchini is tender.
Remove from the oven and let it cool for a few minutes before serving.
Notes:
Feel free to add other vegetables like bell peppers or mushrooms for variety.
