Ingredients:  

Main Ingredients

  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 cup salsa
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup crushed tortilla chips
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until soft, about 5 minutes. Add minced garlic, cumin, chili powder, salt, and black pepper. Cook for another 2 minutes.
  • In a large mixing bowl, combine black beans, corn, salsa, and the cooked onion mixture. Mix well.
  • Transfer the mixture to a baking dish. Top with shredded cheese and crushed tortilla chips.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add more veggies like bell peppers or zucchini for extra nutrition.
