Instructions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cooked rice, black beans, corn, salsa, cumin, chili powder, garlic powder, salt, and pepper.
Transfer the mixture to a greased baking dish and spread it out evenly.
Sprinkle the shredded cheese evenly over the top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Notes:
Feel free to add any other veggies you like, such as bell peppers or onions.
