Instructions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the butternut squash, onion, bell pepper, and garlic.
Drizzle with olive oil and sprinkle with chili powder, cumin, salt, and black pepper. Toss to coat.
Transfer the mixture to a baking dish and spread it out evenly.
Bake in the preheated oven for 30 minutes, or until the squash is tender.
Remove from the oven and sprinkle with cheddar cheese and bread crumbs.
Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and the bread crumbs are golden brown.
Serve hot and enjoy!

This casserole is great as a side dish or a main course. Adjust the spices to your liking.
