Ingredients:  

Main Ingredients

  • 2 cups Butternut Squash peeled and cubed
  • 1 cup Onion chopped
  • 1 cup Bell Pepper chopped
  • 2 cloves Garlic minced
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 cup Cheddar Cheese shredded
  • 1 cup Bread Crumbs
  • 1 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the butternut squash, onion, bell pepper, and garlic.
  • Drizzle with olive oil and sprinkle with chili powder, cumin, salt, and black pepper. Toss to coat.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 30 minutes, or until the squash is tender.
  • Remove from the oven and sprinkle with cheddar cheese and bread crumbs.
  • Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and the bread crumbs are golden brown.
  • Serve hot and enjoy!

Notes:

This casserole is great as a side dish or a main course. Adjust the spices to your liking.
