Ingredients:  

Main Ingredients

  • 6 cups potatoes, peeled and diced
  • 2 cups cheddar cheese, shredded
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 cup onion, finely chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter, melted

Instructions: 

  • Preheat your smoker to 375°F (190°C).
  • In a large mixing bowl, combine potatoes, cheddar cheese, sour cream, cream of chicken soup, onion, salt, and pepper. Mix well.
  • Transfer the mixture to a greased baking dish.
  • Drizzle melted butter over the top.
  • Place the baking dish in the smoker and cook for about 1 hour, or until the potatoes are tender and the top is golden brown.
  • Remove from the smoker and let it cool for a few minutes before serving.

Notes:

This dish can be prepared a day in advance and then smoked just before serving.
