Instructions:
Preheat your smoker to 375°F (190°C).
In a large mixing bowl, combine potatoes, cheddar cheese, sour cream, cream of chicken soup, onion, salt, and pepper. Mix well.
Transfer the mixture to a greased baking dish.
Drizzle melted butter over the top.
Place the baking dish in the smoker and cook for about 1 hour, or until the potatoes are tender and the top is golden brown.
Remove from the smoker and let it cool for a few minutes before serving.
Notes:
This dish can be prepared a day in advance and then smoked just before serving.
