Ingredients:

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 can sauerkraut drained
  • 1 medium onion chopped
  • 2 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  • In a large bowl, combine the cooked beef mixture, uncooked rice, sauerkraut, beef broth, salt, and pepper. Mix well.
  • Transfer the mixture to a greased baking dish. Cover with aluminum foil.
  • Bake in the preheated oven for 45 minutes, or until the rice is tender and the liquid is absorbed. Remove the foil during the last 10 minutes of baking to allow the top to brown slightly.
  • Let the casserole sit for a few minutes before serving. Enjoy!

Notes:

This casserole is perfect for a cozy family dinner. You can also add some shredded cheese on top during the last 10 minutes of baking for an extra layer of flavor.
