Ingredients:  

Main Ingredients

  • 8 oz penne pasta
  • 2 cups portobello mushrooms, sliced
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Add the sliced portobello mushrooms to the skillet and cook until tender.
  • In a large bowl, combine the cooked pasta, sautéed mushrooms, marinara sauce, dried basil, and dried oregano. Mix well.
  • Transfer the mixture to a baking dish. Top with shredded mozzarella and grated parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from oven and let it cool for a few minutes before serving.

Notes:

Feel free to add other veggies like bell peppers or spinach for extra flavor and nutrition.
