Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 3 bell peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add onion and garlic to the skillet, cook until softened.
  • Stir in rice, beef broth, diced tomatoes, black beans, corn, bell peppers, chili powder, cumin, salt, and pepper.
  • Bring to a simmer and cook for 10 minutes.
  • Transfer mixture to a casserole dish, top with shredded cheese.
  • Bake in preheated oven for 25-30 minutes, until cheese is melted and bubbly.

Notes:

Feel free to add more spices or adjust the ingredients to your taste.
