Ingredients:  

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 cup Chopped Carrots
  • 1 cup Chopped Celery
  • 1 cup Chopped Onion
  • 2 cloves Garlic minced
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine lentils, vegetable broth, diced tomatoes, carrots, celery, onion, garlic, thyme, and oregano. Mix well.
  • Transfer the mixture to a baking dish. Cover with aluminum foil.
  • Bake in the preheated oven for 45 minutes or until the lentils are tender.
  • Season with salt and pepper to taste before serving.

Notes:

Feel free to add other vegetables like bell peppers or zucchini.
