Instructions:
Preheat oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add chicken and sausage, cook until browned.
Add celery, bell pepper, onion, and garlic. Cook until vegetables are tender.
Stir in chicken broth, diced tomatoes, rice, Cajun seasoning, thyme, salt, and pepper. Bring to a boil.
Transfer mixture to a baking dish. Cover with foil and bake for 30 minutes.
Remove foil and bake for an additional 10 minutes, or until rice is tender.
Let stand for 5 minutes before serving.
Notes:
For extra flavor, add a splash of hot sauce before serving.
