Ingredients:  

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 cup celery, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 can diced tomatoes 14.5 oz can
  • 1 cup long grain rice
  • 1 tsp Cajun seasoning
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add chicken and sausage, cook until browned.
  • Add celery, bell pepper, onion, and garlic. Cook until vegetables are tender.
  • Stir in chicken broth, diced tomatoes, rice, Cajun seasoning, thyme, salt, and pepper. Bring to a boil.
  • Transfer mixture to a baking dish. Cover with foil and bake for 30 minutes.
  • Remove foil and bake for an additional 10 minutes, or until rice is tender.
  • Let stand for 5 minutes before serving.

Notes:

For extra flavor, add a splash of hot sauce before serving.
