Ingredients:

  • 6 eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, beat the eggs.
  • Add the cottage cheese, shredded cheddar cheese, chopped green onions, salt, and black pepper to the eggs. Mix well.
  • Pour the mixture into a greased baking dish.
  • Bake in the preheated oven for 30 minutes, or until the casserole is set and golden brown on top.
  • Let it cool for a few minutes before serving.

Notes:

Great for breakfast or brunch. Serve with a side salad or toast.
