Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 6 poblano peppers roasted and peeled
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup milk
  • 4 eggs beaten
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Layer roasted poblano peppers in a baking dish.
  • Spread cooked ground beef over the peppers.
  • Sprinkle shredded cheese over the beef.
  • In a bowl, mix milk, beaten eggs, salt, and black pepper. Pour over the casserole.
  • Bake in preheated oven for 40 minutes, or until set and golden brown.

Notes:

Let the casserole cool for a few minutes before serving.
