Ingredients:  

Main Ingredients

  • 1 large butternut squash peeled, seeded, and cubed
  • 1 lb ground beef
  • 1 cup shredded cheese cheddar or your choice
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions: 

  • 1. Preheat your oven to 375°F (190°C).
  • 2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
  • 3. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned.
  • 4. Season with salt and black pepper. Remove from heat.
  • 5. In a large mixing bowl, combine the cubed butternut squash and the beef mixture. Mix well.
  • 6. Transfer the mixture to a baking dish and top with shredded cheese.
  • 7. Bake in the preheated oven for 30-40 minutes, or until the squash is tender and the cheese is bubbly and golden.
  • 8. Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
