Instructions:
Preheat your oven to 375°F (190°C).
In a large baking dish, layer the sliced zucchinis, eggplants, potatoes, tomatoes, and onions.
Sprinkle the minced garlic over the vegetables.
Drizzle the olive oil evenly over the vegetables.
Season with salt, black pepper, dried oregano, and dried thyme.
Cover the baking dish with aluminum foil and bake for 40 minutes.
Remove the foil and bake for an additional 20 minutes, or until the vegetables are tender and slightly browned.
Let it cool for a few minutes before serving. Enjoy!
Notes:
This dish can be served hot or at room temperature. It's great with a side of crusty bread.
