Ingredients:  

Main Ingredients

  • 2 large Zucchinis sliced
  • 2 large Eggplants sliced
  • 4 medium Potatoes sliced
  • 2 large Tomatoes sliced
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 1/2 cup Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, layer the sliced zucchinis, eggplants, potatoes, tomatoes, and onions.
  • Sprinkle the minced garlic over the vegetables.
  • Drizzle the olive oil evenly over the vegetables.
  • Season with salt, black pepper, dried oregano, and dried thyme.
  • Cover the baking dish with aluminum foil and bake for 40 minutes.
  • Remove the foil and bake for an additional 20 minutes, or until the vegetables are tender and slightly browned.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This dish can be served hot or at room temperature. It's great with a side of crusty bread.
