Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 1 can Tomato Sauce 15 oz
  • 1 cup Frozen Corn
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Sour Cream
  • 1 cup Cooked Rice
  • 1 cup Black Beans drained and rinsed
  • 1 cup Tortilla Chips crushed

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion and minced garlic to the skillet. Cook until onions are translucent.
  • Stir in tomato sauce and simmer for 5 minutes.
  • In a baking dish, layer the ingredients starting with the cooked rice, then the beef mixture, followed by black beans, corn, sour cream, shredded cheese, and crushed tortilla chips.
  • Bake in preheated oven for 30 minutes or until cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.
