Instructions:
Preheat oven to 350°F (175°C).
Break matzos into small pieces and soak in warm water for a few minutes. Drain well.
In a large bowl, beat eggs and mix in milk, sugar, salt, and cinnamon.
Add drained matzo pieces to the egg mixture and stir to combine.
Pour melted butter into a baking dish, then add the matzo mixture.
Bake for 20 minutes or until golden brown.
Notes:
Serve warm with a dollop of sour cream or applesauce if desired.
