Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 2 cups Cooked Rice
  • 1 cup Lactose-Free Cheddar Cheese, shredded
  • 1 cup Zucchini, diced
  • 1 cup Carrots, diced
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Olive Oil

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
  • Add the diced zucchini and carrots to the skillet. Cook for about 5 minutes, until the vegetables are tender.
  • Stir in the cooked rice, salt, and pepper. Mix well.
  • Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

This casserole is perfect for meal prep and can be stored in the fridge for up to 3 days.
