Ingredients:  

Main Ingredients

  • 2 cups Leftover Spanish rice
  • 1 cup Shredded cheese Cheddar or Mexican blend
  • 1 cup Cooked chicken diced
  • 1 can Black beans drained and rinsed
  • 1 cup Salsa
  • 1 tsp Cumin
  • 1 tsp Chili powder

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the leftover Spanish rice, shredded cheese, cooked chicken, black beans, salsa, cumin, and chili powder.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Feel free to add any other leftover veggies you have on hand.
