Instructions:
Preheat oven to 375°F (190°C).
In a large pan, melt the butter and sauté the leeks until soft.
Add the potatoes and cook for another 5 minutes.
Stir in the milk, salt, and pepper. Bring to a simmer.
Transfer the mixture to a baking dish and top with shredded cheddar cheese.
Bake for 30-35 minutes, until the top is golden and bubbly.
Let it cool for a few minutes before serving.
Notes:
For a creamier texture, you can add a bit of heavy cream to the mixture before baking.
