Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Salsa
  • 2 cups Shredded Cheese cheddar or Mexican blend
  • 1 packet Taco Seasoning

Instructions: 

  • 1. Preheat oven to 375°F (190°C).
  • 2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • 3. Add taco seasoning to the beef and stir to combine.
  • 4. In a mixing bowl, combine beef mixture, black beans, corn, and salsa.
  • 5. Transfer mixture to a baking dish and top with shredded cheese.
  • 6. Bake in preheated oven for 25-30 minutes, or until cheese is melted and bubbly.
  • 7. Let cool for a few minutes before serving. Enjoy!

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
