Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 can enchilada sauce
  • 1 cup shredded cheese
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 6 pieces tortillas

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground beef until browned. Drain any excess fat.
  • In a mixing bowl, combine the cooked beef, enchilada sauce, black beans, and corn.
  • Layer 3 tortillas at the bottom of a baking dish. Spread half of the beef mixture over the tortillas. Sprinkle with half of the shredded cheese.
  • Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

You can add some chopped cilantro or green onions on top for extra flavor.
